What is a grease trap?
The grease trap concept was originally patented in the early 1800's by Nathaniel Whiting in California and they haven't changed much since then! A grease trap is a unit which separates the fats, Oils, and grease (FOG) from the water and the baffle stores the FOG to keep it from entering into the drainage line and sewer systems.
What size of grease trap does my business need?
You might ask, "If a bigger grease trap is better?" You might be surprised, but the answer is not always yes. Installing the proper size though is critical due to over sizing can result in the deterioration of your plumbing, interceptor, and drainage system.

What is the purpose of having a grease trap?

FOG is approximately 80% lighter than water,once the water is cooled, the grease will float to the top allowing heavier solids to remain at the bottom. Therefore, only allowing water to exit the grease trap into the city sewer lines.

Proper grease trap maintenance is vital to maintain its efficiency. First check with your city of active authority, many having specific ordinances in effect which will give you necessary pumping requirements and other needed information. Violation of such ordinances could result in fines given by the city or active authority. Also, maintenace prevents problems such as foul odors, backup, line blockages, and overflow being deposited into sewer lines which is a finable offense.
